Cooking With Kayl

When it comes to meals I really try to keep everything as simple as possible – but still yummy of course! I just moved to my very first apartment and it has definitely been an adjustment to cook for myself… not that I’m a bad cook or anything because I think that I do a pretty good job, but I just can’t stand how long it can take sometimes to cook a meal.

Also when I go grocery shopping I spend far too much money. I’ve actually been using an app lately called Instacart where someone does the shopping for you and delivers it to you (kinda like postmates)

I went to Trader Joes the other day at like 8am because I wanted to beat the crowd but apparently, it is always packed, which blows my mind. I really love Trader Joes because the food is high quality and not as expensive as Whole Foods.

Moving on… 

One thing to know about me & my cooking style is that I really do not follow directions 🙂

The other night for dinner I made a Garlic & Lemon Shrimp Pasta dish.

  • Cook pasta (use whatever pasta YOU want, it’s your dish honey!!).
  • In a separate pan, drizzle a little bit of olive oil and start to cook the shrimp.
  • Include 1 teaspoon of garlic powder – I also included some minced garlic because nothing is worse than having a mediocre flavor for your meal.
  • Add approximately 1/2 teaspoon of salt
  • Add approximately 1/2 teaspoon of pepper
  • The original recipe called for 1/4 cup of lemon juice – ya know from the bottle, but because I didn’t have bottled lemon juice I decided to take 3-4 lemons and make my own lemon juice (DIY!!) – lol no seriously though, I did a little more than 1/4 cup of lemon juice
  • Once the shrimp was cooked & the pasta was cooked, I put the pasta in the pan with the shrimp and cooked that on low for a few minutes while I vigorously stirred and mixed everything together.


This is the final product – also, do not cut lemons with a serrated blade because you will be left wondering why your lemon slices are looking lame. You need to cut lemons with a plain sharp blade.

This in total took me maybe 18 minutes. What I wish I would have done was added a little more minced garlic, a little more pepper, and added some spinach!

Onto the next delicious meal… 

I love tacos… like seriously love tacos/taco salads/burritos. I like Chipotle, they’re great and all but it is definitely not the same as cooking up some homemade tacos! Also, I didn’t follow a recipe for this – I think that’s what makes it so much more unique.

  • I put some corn into a small pot and let it warm up while I did the rest
  • I got some ground beef from the local grocery store, put it in a skillet on medium heat and mixed it throughout the whole cooking process so that it was all cooked properly… no one wants uncooked meat. (Also, no need to add anything to the skillet or meat, no butter, oil, or anything like that!) Halfway through, I did add taco seasoning
  • I cooked up some rice in another pan, added the slightest bit of olive oil, salt (like 2-3 shakes), pepper (2 shakes), cilantro (1/2-ish tablespoon), and (1) lime so that it was flavorful
  • In another skillet, I heated up a tortilla
  • Once everything was done cooking I included some greens, sour cream, cheese, and hot sauce to my finished product

In total this took me about 30 minutes because there were a handful of steps that occurred simultaneously.

This next meal is probably my favorite …


This is the most basic meal one can make – that’s why I love it so much. I had this for lunch the other day and it only took 5-7 minutes.

  • 2 slices of rye bread – put it in the toaster
  • Once it is toasted to perfection add some peanut butter, almond butter, or whatever your heart desires
  •  I use 1 pack of Nature Nate’s Raw Honey and spread it across the toast
  • Next, I sliced up some delicious strawberries that I got from Trader Joes
  • To finish it off, I poured myself a glass of Trader Joes Grapefruit Juice
